Cheese Crackers

My kids are huge fans of the cheese cracker. I'm not a huge fan of buying them weekly. This is an amazing and amazingly simple recipe for the best cheese crackers ever!

In a food processor (yes - it is almost necessary) mix:
2 cups flour
1 1/2 tsp salt
1 1/2 tsp ground pepper
2 cups shredded cheese of your choice (we use sharp cheddar)
mix it until it looks almost like cornmeal. Add 3-4 tbls water one at a time. You may need need to mix it for a minute to get it into a ball, so don't rush to add more water.

Refrigerate the dough for at least an hour. Directions say to leave it in there for 24 hours - I'm just not that patient. Cut the dough into squares or whatever shape you want and place them on a cookie sheet. You can put a ton on there, just don't let the crackers touch each other. Bake at 350 for 16 minutes.

YUMMY! My hubby is in love with these and my kids are crazy about them. Keep in an airtight container when storing.
